Should be very similar; it'll depend on the heat treat, of course, but the 440 steels, if unlabeled, were likely 440A, a fairly soft stainless. 1095 is usually run a bit harder (unless it's a chopper or the like meant to take impacts) but will lack any of the chromium carbides present in most stainless steels.
